Having breakfast be creative is sometimes the hardest part of our mornings. It’s easy to opt for the simplicity of cereal but if you like to aim for a more nutritious option, one of my favorite new trends is the Smoothie Bowl.
Sure, you can have a regular smoothie and it will be just as nutritious but the bowl just seems to add another element, something you can dig into, not unlike a bowl of cereal, and even topped with a little crunch! It’s also great for those who like a little more substance than a simple drink for breakfast.

Berry Smoothie Bowl
1 Cup Kale (I like to discard middle stems for easier digestion)
1 Tbsp. Chia Seeds or Flax Seeds
1 Cup Unsweetened Vanilla Almond Milk
1 ¼ Cups Frozen mixed Berries (Blueberries, blackberries and strawberries)
½ Frozen Banana
½ Cup ice cubes (if Banana isn’t frozen)
1 Medjoll Date (or 2 if you like things slightly sweeter)
1 Tbsp. Almond Butter
In blender, mix Kale, Almond Milk and Chia together, blending until smooth. Add frozen banana, berries, ice (if necessary), dates and almond butter and blend until thickened. (It doesn’t have to be entirely smooth as some texture helps differentiate it from a regular smoothie.) If using a Vitamix, you may have to muddle it to help it blend. If regular blender, push the sides down with a spatula in between blending to help move the frozen bits around. Let sit for a few minutes in the refrigerator so the Chia can settle, helping to thicken the liquid.
You can serve with remaining banana (sliced), blueberries or raspberries, granola, dried Goji berries, chocolate chips and slivered almonds. If you like a little more sweetness, add drizzled honey and coconut. It’s a filling breakfast or lunch…full of nutrients and vitamins…and doesn’t it look patriotic for the 4th of July weekend?!
