One of my favorite spots for lunch in LA is Ammo Cafe. It’s on Highland Ave. in Hollywood and always a happening lunch crowd, so best to try and make a reservation. It’s where movie deals can be made and where the power players dine. Their menu is fabulous, fresh, full of flavor and also healthy. The most favored dish on their menu (in this writers opinion) is the Alexander’s Brown Rice. It can be made with Chicken or Tofu or just veggies. In my attempt to replicate this recipe to enjoy weekly at home, I’ve come up with the following and so far the closest to it that I can. For the real deal, head to Ammo if you can, it will be worth the visit!
This makes about 4 servings.
Ingredients:
1 Jalapeno Pepper
¼ cup Red Onion
½ cup Cherry Tomatoes, sliced in half
¼ cup fresh Cilantro
1 Lime
1 small Boy Choy, chopped
¼ head of Broccoli, chopped
Cup Green Beans, chopped
Organic Breast of Chicken cut into small pieces
2 Cups cooked Brown Rice
1-2 tbsp oil (olive or canola)
salt and pepper to taste
Mix together Jalapeno, Red Onion, Cherry Tomatoes, Cilantro, Lime and salt and let sit for an hour or more.
Start Brown Rice as per packet directions. (Usually one cup of Brown Rice and two cups of water will yield 2 cups of cooked Rice)
Flash steam the broccoli and green beans already cut until a bright green but still crispy. Set aside until Rice is ready.
Take cut chicken and season generously with salt and pepper, making sure to get both sides. Heat large fry pan with olive oil and add chicken. Pan fry on Medium until chicken is golden brown and cooked through. Take chicken out of pan and set aside briefly. Add cooked Rice, Tomato mixture and vegetables and stir fry on medium-low heat until all mixed in with the Rice and vegetables are warmed. Add the chicken and stir-fry for a minute or so more. Serve when warmed through and enjoy!
If your kids are less adventurous, you can hold off on adding the Tomato mixture and just mix in chicken and veggies to serve them.
