There is a celebratory feeling when the weather finally starts to get warmer, or in L.A.’s case, continuously stays warm for more than a week! People put away their Fall clothes and pull out their sandals and flip-flops. Backyard BBQ’s are aplenty where friends and family gather. One of my favorite afternoon snacks for friends is the Dean & Deluca’s guacamole recipe I’ve had for many years. It’s not your normal guac, but refreshing and yummy no matter how you spice it. It’s also something you can make ahead of time, as it tastes better if you let the mix soak into the avocado a little longer than you normally would and no worries with the avocado turning brown. Sometimes I even have extra mix and save it a day for a taco dinner. This is my family’s favorite way to make guacamole…hope you enjoy!
Dean & Deluca’s Guacamole
¼ cup minced onion
2-4 jalapeños (seeded) *if my daughter is eating I usually limit to 2
2 large tomatillos quartered (or 3 Smaller ones)
Juice of 1 lime + additional for avocados
¼ cup fresh cilantro
5 large avocados (Hass)
Salt & pepper to taste
Place onions, jalapeños, tomatillos, cilantro and lime juice in a food processor and puree.
Peel and Stone avocados and cut into chunks (don’t mash), drizzling with remaining lime juice. Toss together with blended tomatillo puree. Keep refrigerated and covered w/ plastic for 1 to 2 hours.
